homemade muesli

This month’s cooking club task was to prepare a dish from your current favourite recipe book. It is probably obvious which is my current go-to recipe book – Friendly Food – more out of necessity than favoured. I do appreciate that it has helped me wade through the monotony of the elimination diet with some new ideas. I’ve modified the toasted muesli recipe to make it my own…
Preheat oven to 180 degrees celsius. In a large bowl mix together 500g rice flakes and 200g grounded rice bran. In a smaller bowl mix together approximately 5-8 tablespoons of golden syrup and 5-8 tablespoons of rice bran oil. Stir oil/syrup mix into bran/flakes mix. Spread across a large baking tray. Check every 5 minutes and turn mixture over until all cooked to a crispy golden brown.
The amount of sweetness can be modified with the golden syrup/oil amounts. Given I have no packaged foods in my diet at the moment I have found I can be more liberal with my use of sugar or salt in my cooking than I normally would be.
I have been serving mine with Zymil lactose-free milk and loving the sweet, tasty crunchy creation. These photos were taken during my “salicylates challenge” week so I was also able to enjoy a granny smith apple and peppermint tea with my muesli.

These are such tranquil beautiful photos, as always! I love a good muesli for breakfast and have to get back into the habit of making it from scratch. Every time I read about your elimination diet I’m so inspired to try and make some changes to my diet, to simplify and return to whole foods more. Muesli is always one of my favourite starts to the day! I’m glad you were able to adapt the recipe to meet your elimination diet. I’m sorry you have not had sound advice with your diet, it must be so frustrating after all the effort you have put in.

Beautiful photos – I find this idea of the elimination diet really interesting. I often think I’m not feeding myself in the best possible way for myself, but I’m so easily led astray by what’s easy or delicious. I really like the idea of starting from scratch, and building a more mindful way to eat.
